Pico de gallo is a Mexican fresh, uncooked salsa with a little or a lot of spice depending on your personal preference. My Pico de Gallo often ends up to be more like a tomato salad with fresh coriander, lime and a few jalapeños. It is the perfect side salad for many dishes, like my Mexican tamale pie (recipe coming soon) and is one of my favourite salads during BBQ season.
To make it as a salsa, the tomatoes just need to be chopped more finely, the ingredients are the same. I love this salsa with a pile of nachos, sour cream and guacamole. Perfect for lazy evenings on the sofa in front of the TV while watching your favourite show(s) on Netflix or warm summer evenings on the terrace where you can enjoy it with a glass or two of cold beer or a glass of white wine (my version).
Pico de gallo is very simple to make – it consists of only 5 ingredients: fresh tomatoes, fresh coriander, jalapeños, lime juice & salt. Some also add raw onion to the mix. How much you need of each ingredient really depends on your own preference. If you want it really spicy add a lot more of the jalapeños, if you love coriander – just add two handfuls instead of one. If you are not a big fan of coriander just substitute it with fresh parsley, I have done this before and it was still very tasty.
For a small bowl of pico de gallo I only use 4 chopped ripe tomatoes, 2 slices of jalapeños, a generous handful of chopped fresh coriander (cilantro) and the juice of 1/2 lime. In a small bowl I mix it all together and that’s it – very simple, quick and so delicious! ♡
- 4 ripe tomatoes, chopped
- 2 slices of jalapeño, chopped
- Juice of ½ lime
- 1 genersous handful of fresh coriander (cilantro)
- All you need to do is mix all ingredients together.
