Smoothies are a wonderful and quick way to add some fruit and vegetables to our diet. Packed with vitamins and essential minerals they are a great way to start the day or boost our energy levels when needed throughout the day. My Orange, Carrot & Ginger smoothie is made in no time, consisting of only five ingredients which are all full of goodness – a delicious way to rejuvenate the body!
Oranges are a great source of vitamin C, B1 and folate whereas carrots offer a high content of beta carotene which is converted into vitamin A in the body – great for overall health, eyes and skin. However, many people don’t realise that beta carotene is fat soluble so in order to help the body to absorb it, it needs a little bit of healthy fat or oil. I, therefore, added 1 tsp of virgin olive oil but you can also use other types of oil such as flaxseed oil or even better is to mix it up from time to time.
Ginger is another powerhouse of nutrition and health benefits and is great to boost your overall immune system with its potent antioxidants and anti-inflammatory effects. Ginger goes a long way and depending on how much you like the taste of it, feel free to add more. I personally love the taste of ginger and think that it works beautifully together with the orange and carrot flavours.
For 1 glass you only need 2 oranges, 1 medium organic carrot, about 1 cm piece of fresh ginger (or more), 1 tsp of virgin olive oil (or any other healthy oil) and 4-5 ice cubes.
Before you put everything into a powerful blender (I use the Vitamix which gives a beautifully smooth result), juice the two oranges, wash your carrot and roughly chop it (I don’t take the skin off the carrot when using organic produce) then place everything into a blender and mix until smooth.
